White Wine Imperial Fruit Berliner Weisse
We did a straight up big extra everything clean sour and golden berliner weisse. Taking our regular sour culture beer and ramping it up all the way to eleven. Then we added sea buckthorn, cloudberries and some white wine. Then some more white wine. Hybrid!
Ever since we started doing lacto-sours we’ve kept them fairly low ABV. And, ever since we started doing sours we’ve wanted to do a big one. We’ve always found reasons not to. Either time, processes or yeast did not play to our favor and the beer, if it turned out at all, did not turn out the way we’d like. Until now that is. This beer’s base beer, Sour Gold, is the result of a long journey both in thought and practice. Playing around with it, adding berries and blending it with white wine, creating Sour Berries, came from intuition and creativity. Fantastic!
