White Wine Barrel Aged Raspberry and Blueberry Sour
Together with NBeer of Beijing, China, we did a sour take on the Swedish jam Drottningsylt or Queen’s Jam. A classic jam, and now beer, pairing raspberries and blueberries into heaven. Then we let that beer mature on white wine barrels. Regalia!
Over the last couple of years, the Chinese craft beer market has really boomed. Breweries, craft beer bars and craft beer lovers have popped up all over the place, at an amazing pace. For us China has become an important export market. In doing that, exporting to China, we found our friends at Nbeer. As we love collaborating with our friends, and we’ve never collaborated with any brewery form Asia before, this beer was just a logical progression. We discussed recipes back and forth quite a bit, landing on something Swedish and within the New Nordic Beer project. And, to give some of that beer an extra edge, we had to barrel age it. So nice!
